A wonderful blend of Apple Pie and a Spiced inspired muffin. Add more or less spices and Coconut Sugar depending upon how much spice and sweetness preferred. The Apple Pie Filling makes about two dozen of the Apple Pie Muffins. Or make one recipe using the remaining Apple Pie filling for another recipe! For more Apple Pie Filling consider using a jumbo muffin tin!
The Apple Pie Filling should be made first and placed in the refrigerator while making the muffins. Alternatively, the Apple Pie Filling could be made ahead of time. Serve warm or cold! Consider adding whipped cream or ice cream! Enjoy!
Apple Pie Spice Muffin with Pecan Topping
Ingredients
Apple Pie Filling Ingredients
- 5 Apples medium
- 2 tbsp Water
- 3 tbsp Butter melted
- 1 to 2 tsp Cinnamon
- 1/4 to 1/3 cup Coconut Sugar
Pecan Topping Ingredients
- 1/4 cup Almond Flour
- 1 tsp Coconut Flour
- 3/4 tsp Cinnamon
- 1 tbsp Coconut Oil melted
- 1 tbsp Maple Syrup
- 1/3 cup Pecans chopped
Muffin Dry Ingredients
- 2 cups Almond Flour
- ΒΌ cup Coconut Flour
- 1/2 cup Coconut Sugar
- 1/2 tsp Salt
- 1/2 tsp Baking Soda
- 1 1/2 tsp Baking Powder
- 1 tsp Cinnamon
- ΒΌ tsp Nutmeg
- ΒΌ tsp Cloves
- ΒΌ tsp Ginger
Muffin Wet Ingredients
- 1 tsp Vanilla
- 1 cup 2% Milk + 1 tsp Vinegar or 1 cup Buttermilk
- 3 tbsp Butter melted
- 2 Eggs lightly beaten
Optional
- Whipped Cream
Instructions
Apple Pie Filling Preparation
- Peel, core and dice apples depending upon how large or small you prefer.
- Melt butter then stir in apples. Add cinnamon to coat the apples. Stir in the coconut sugar and water.
- Cover and cook stirring occasionally for about 10 minutes or until tender. Place in refrigerator to slightly cool.
Pecan Toppings Preparation
- Mix together all ingredients except pecans; then fold them in.
Muffin Preparation
- Preheat oven to 375 degrees.
- In a large bowl, mix together the dry ingredients. In a smaller bowl, mix together the wet ingredients then blend into the dry ingredients.
- Line a 12 cup muffin tin, add a little less than 1/4 cup batter to each cup. Then make a small well in each muffin batter. Add about 1 tablespoon of the apple pie filling into the well. Top with the Pecan topping.
- Bake for 25 to 30 minutes until brown on top.
