- Yukon Gold potatoes are medium-starch all-purpose potatoes. They are a great choice providing the versatility of pureeing for a thicker soup or leaving the potatoes in bite-size chunks that retain their texture.

How do you thicken Potato Soup?
To thicken the Potato Soup, I like to puree some of the soup. Once the potatoes are tender, puree the desired amount of the soup. I like to use a food processor to puree and rough chop some of the potatoes if they are too big. Basically add some of the soup to a food processor and puree until desired size. Or you can use an immersion blender.
Another option is to use an equal amount butter to flour. For example, melt 2 tablespoon of butter and then whisk in 2 tablespoons of flour. Whisk into the Potato Soup and let simmer to thicken. And sometimes Potato Soup naturally thickens overnight!
Can Potato Soup be reheated?
Yes, you can reheat Potato Soup. If reheating on the stovetop be careful to not burn the soup. Reheat in a saucepan on medium-low heat until warm through. Do not boil the soup. Another option is to use the microwave. Place Potato Soup in a microwave safe container with a loose lid or other splatter cover. Place into the microwave reheating on a lower setting until heated through. Potato Soup can thicken overnight. If this happens, just add more Chicken Stock and/or Half and Half when reheating.

- Milk & Half and Half: The broth’s foundation includes the chicken broth and milk. I like to use 2% milk and full fat Half and Half.
- Bacon: Select a thick-cut smoked bacon for optimal flavor.
How to Make Potato Soup from Scratch
- Saute’ the Veggies: We start the soup by melting the butter in a heavy soup pot to sauté the diced sweet onions and celery until tender.
- Add broth and potatoes: Add the chicken broth, salt, pepper and potatoes bringing to a soft boil. Cook until potatoes are tender.
- Thicken soup: To thicken the Potato Soup, puree some of the soup. (This is an optional step.)
- Add remaining ingredients: Add milk, half and half, and cheese simmering until warm through.
- Serving: When serving the soup, top with crispy bacon, cheese, fresh chives, and sour cream.

- 3 pounds Yukon Gold Potatoes washed, peeled, and cubed
- 4 cups Chicken Broth
- ½ tsp. White Pepper
- 2 tsp. Kosher Salt
Soup Ingredients
- 2 cups Milk 2%
- 1 cup Extra Sharp Cheddar Cheese shredded
- 2 cups Half and Half
- 8 Bacon slices cooked and crumbled
Toppings
- Fresh Chives
- 1 tbsp. Kerrygold Irish Cheese Skellig and Reserve Cheddar
- 1 tbsp. Sour Cream
Instructions
- In a large soup pot, melt butter and add onions and celery – cook until tender.
- Add chicken broth, salt, pepper and bring to a soft boil.
- Add potatoes and simmer for 30-minutes or until cooked through.
- Puree desired amount of soup. (Optional step to thicken the soup.)
- Add soup ingredients and simmer about 15 minutes, stirring periodically.
- Serve with desired toppings!
