5 Tips for Selecting the Best Potato for Soup

Everyone has his or her favorite type of potato for soup!

  1. A deciding factor in selecting a potato depends if the potatoes should fall apart or retain their shape and texture.
  2. Russets are a high-starch potato popular for baked potatoes and baked potato soup.
  3. Yukon Gold potatoes are medium-starch all-purpose potatoes. They are a great choice providing the versatility of pureeing for a thicker soup or leaving the potatoes in bite-size chunks that retain their texture.
  4. My preference is to puree some of the potatoes leaving the remaining ones in chunks.

Common Questions About Making Potato Soup

Below are a few answers to some common questions when making Cheesy Potato Soup. Let us know if you have other questions we can answer.

How do you thicken Potato Soup?

To thicken the Potato Soup, I like to puree some of the soup. Once the potatoes are tender, puree the desired amount of the soup. I like to use a food processor to puree and rough chop some of the potatoes if they are too big. Basically add some of the soup to a food processor and puree until desired size. Or you can use an immersion blender.

Another option is to use an equal amount butter to flour. For example, melt 2 tablespoon of butter and then whisk in 2 tablespoons of flour. Whisk into the Potato Soup and let simmer to thicken. And sometimes Potato Soup naturally thickens overnight!

Can Potato Soup be reheated?

Yes, you can reheat Potato Soup. If reheating on the stovetop be careful to not burn the soup. Reheat in a saucepan on medium-low heat until warm through. Do not boil the soup. Another option is to use the microwave. Place Potato Soup in a microwave safe container with a loose lid or other splatter cover. Place into the microwave reheating on a lower setting until heated through. Potato Soup can thicken overnight. If this happens, just add more Chicken Stock and/or Half and Half when reheating.

How long will potato soup last in the refrigerator?

Because potato soup is milk-based, it lasts about 3 to 4 days in the refrigerator. Store in an air-tight container to maintain the soup’s quality.

Can you freeze Cheesy Potato Soup with Bacon?

Potato Soup is best enjoyed fresh and not frozen. Milk based soups do not freeze well. The milk tends to become grainy and separate when thawed or rewarmed. The potatoes may become mushy or have an odd texture once frozen.

Cheesy Potato Soup with Bacon Key Ingredients

Potato Soup is based upon a few key ingredients making it important to select Quality products.

  • Butter: The soup’s foundation starts with Kerrygold Pure Irish Butter made from Grass Fed Cows.
  • Cheese: Kerrygold Irish Cheeses are a perfect compliment to this soup. My selection includes Skellig and Reserve Cheddar. Skellig is a hard crumbly cheese with a sharp, rich flavor that also has a granular texture. Reserve Cheddar is a smooth, rich Cheddar Cheese with a sharp, strong flavor that comes from an extra year of aging.
  • Chicken Broth: Pacific Organic Free Range Chicken Broth that adds depth of flavor with sea salt and seasonings. I love the rich color and taste of this Chicken Broth over the cheaper, generic versions.
  • Milk & Half and Half: The broth’s foundation includes the chicken broth and milk. I like to use 2% milk and full fat Half and Half.
  • Bacon: Select a thick-cut smoked bacon for optimal flavor.

How to Make Potato Soup from Scratch

  1. Saute’ the Veggies: We start the soup by melting the butter in a heavy soup pot to sauté the diced sweet onions and celery until tender.
  2. Add broth and potatoes: Add the chicken broth, salt, pepper and potatoes bringing to a soft boil. Cook until potatoes are tender.
  3. Thicken soup: To thicken the Potato Soup, puree some of the soup. (This is an optional step.)
  4. Add remaining ingredients: Add milk, half and half, and cheese simmering until warm through.
  5. Serving: When serving the soup, top with crispy bacon, cheese, fresh chives, and sour cream.
