5 Tips for Making Chicken and Ham Soup
- Chicken: Using a Rotisserie Chicken is a quick option to prepare this soup in 30-minutes. A BBQ Rotisserie Chicken adds wonderful flavor!
- Ham: A good quality Ham such as Cherrywood Smoked Ham or Maple Glazed Ham steaks are perfect because you want to keep layering the flavors.
- Thicken Soup: To thicken the Chicken and Ham Soup, my preference is to use arrowroot since it thickens at a lower temperature and can be added near the end of making the soup. Plus it is a good option for freezing.
- Chives: A blend of dried chives in the soup topped with fresh chives adds a nice light onion flavor.
- Crunchy Topping: Experiment with different crunchy toppings such as tortilla strips and Fritos!
Making the Chicken and Ham Soup
- Olive Oil: Heat the Olive Oil in a soup pot.
- Add Onions: Add the sweet onions and celery cooking until tender.
- Add Stock: Stir in the Chicken stock.
- Soft Boil: Cover the soup pot bringing to a soft boil.
- Prep: In the meantime, chop the Chicken and Ham into bite size pieces.
- Add Protein: Add the Rotisserie BBQ Chicken and Cherrywood Smoked Ham. Mix into the chicken stock.
- Add Cheese: Blend in the Cream Cheese. Add the Swiss Cheese and Cheddar Cheese. Stir into the soup.
- Season: Mix in the dried Basil, salt and pepper.
- Cook: Cover, and simmer for 10-minutes to heat through.
- Thicken Soup: To thicken the sauce spoon a little of the broth into a small bowl. Whisk in the arrowroot and add back into the soup. Stir. Simmer for 5 minutes to thicken.
- Serve: Ladle the Chicken and Ham Soup into soup bowls topping with your favorite crunchy toppings and fresh chives.

- 64 ounces Chicken Stock
- 5 cups Rotisserie BBQ Chicken chopped or diced

- 16 ounces Cream Cheese
- 3 cups Swiss Cheese shredded
- 1 cup Cheddar Cheese shredded
- 1 tbsp Dried Chives
- ½ tsp Salt
- ¼ tsp White Pepper
- 1 tbsp Arrowroot thickening
