This recipe is really simple to make. If you have never used miso paste before, it is a soybean paste that I found in the International section of the grocery store.

Start with steaming the green beans until they are slightly underdone. Place into ice water to stop them from cooking. To make the Miso sauce, start with heating olive oil in a pan and then cooking the sweet onions for about 2-minutes. Then add garlic and cook for another minute to release the flavors. But be careful because garlic burns easily. Mix in the miso paste and then the water. Bring to a gentle boil and cook for a couple of minutes. Lastly, add the green beans and cook for a minute or two ensuring the green beans are properly coated. Pour into a serving bowl and top with sliced almonds.

Another option is to plate the green beans previously chilled in ice water. Pour the warm miso sauce over them and top with sliced almonds. Also consider toasting the sliced almonds or purchase smoked sliced almonds for another layer of flavor. There are many subtle variations you can try when making this Green Beans Salad with Almonds.   • If you wish to toast the almonds, now is a good time! Place almonds in a frying pan with a little butter. Cook on low heat until light brown.
  • Miso Dressing Preparation
  • In a pan, heat the olive oil and add the sweet onion cooking for about 2-minutes.
  • Add garlic and cook for a minute to release the flavors. But be careful because garlic burns easily.
  • Mix in the miso paste and the water.
  • Bring to a gentle boil and cook for a couple of minutes.
