12 Tips for Making Guinness Cupcakes
- Check ingredients to ensure they are not expired.
- Use Guinness Draught for drinking and baking!
- Bring all ingredients to room temperature for a fluffy baked good. Plan ahead for about 30 to 60 minutes depending upon the temperature of your kitchen and humidity.
- Accurately measure all ingredients.
- Do not over mix the batter. Instead mix together the ingredients until just combined. Over mixing can result in a dense cupcake or the cupcake collapsing in the middle.
- Ensure all ingredients are incorporated in the batter. Use a spatula to mix in any loose flour, sugar, butter that might be on the bowl side or on the bottom.
- Fill the cupcakes using an ice cream scoop or similar measuring cup to ensure equal amount of batter in each cupcake.
- Preheat the oven and take a temperature with an oven-safe thermometer. Accurate temperature is important for the perfect cupcake!
- Place the cupcakes in the center of the oven.
- Do not open the oven door early in the baking time as it can cause the cupcakes to collapse in the middle.
- When opening the oven door, the temperature can reduce. Verify that the oven is at the proper temperature before adding the next batch of cupcakes to bake.
- Let cupcakes cool for 10-minutes before removing from the cupcake pan. For cupcakes filled with too much batter, a butter knife along the edge can help with removing it.
How to Make Guinness Cupcakes From Scratch
Lets get started with making our delicious Guinness Cupcakes with Baileys Frosting!
- Cupcake Pan: Line your cupcake pan with plain liners. Keep the fancy liners to place the baked cupcakes into after decorating.
- Sift Flour: Sift the flour and dry ingredients removing any lumps. No one wants lumps in their cupcake!
- Dry Ingredients: Combine dry ingredients in a large mixing bowl.
- Wet Ingredients: In a smaller bowl, add melted butter, Guinness, and vanilla.
- Eggs and Sour Cream: Whisk in the eggs one at a time and then the sour cream.
- Mix Everything Together: Using a mixer, slowly blend the wet ingredients into the dry ingredients until just mixed.
- Fill Cupcakes: Fill each cupcake about a third full with the batter.
- Bake: Bake in a 350 degrees preheated oven for 15 to 18 minutes. Do the toothpick test to ensure they are done. It should come out clean.
- Cool and Frost: Leave the Guinness Cupcakes in the cupcake pan for 10-minutes. Then remove from the pan and cool completely on a cookie rack. Frost with Baileys Frosting and decorate! Place in a festive cupcake liner if desired.
How to Frost Guinness Cupcakes Without a Piping Bag
When frosting cupcakes, I do not use a piping bag. For me that is just one more item to clean! But of course we want them to look nice. I start with a thinner frosting by using 1 ½ cups of Powdered Sugar. Below is how I decorate them.
- Drop a generous spoonful of frosting into the center of the cupcake.
- Using the back side of the spoon, smooth the frosting starting from the center to the outer edges.
- Add some fun decorate sprinkles!
- Place finished cupcake into a decorative liner.
- Store in an airtight container.

- ¾ cup Baking Cocoa sifted

- 1/2 cup Kerrygold Butter melted
- 1 cup Guinness Draught
- 1 tbsp Vanilla
- 3 Eggs Beaten
- ¾ cup Sour Cream
