Ultimate Oatmeal Raisin Cookies Ingredients

This cookie includes healthier ingredients including Quick Oats, Flaxseed Meal, and King Arthur’s White Whole Wheat Flour. (Keep the Flaxseed Meal in the refrigerator once the package is opened.) For this cookie I use raisins and dark chocolate chips. However, you could use any dried fruit including a mixture of different dried fruits. Dried Apricots are simply delicious in this cookie! The Healthy Oatmeal Raisin Cookie freezes well so be sure to make two batches to ensure you have enough cookies. I cannot stop eating these delicious cookies so freezing them definitely ensure we have some for later.

Oatmeal Raisin Cookie Dough

This is an easy oatmeal raisin cookie recipe. Start with sifting your dry ingredients twice (except for the Quick Oats and Flaxseed Meal) to remove any chunks and bring the ingredients together to aerate. In a large mixer, cream the wet ingredients together until creamy. Slowly mix in the dry ingredients and then stir in the raisins and dark chocolate chips. The resulting cookie batter is dense but is moist. Because of the ingredients it will not have a smooth soft texture. Line your baking sheet with parchment paper and preheat the oven to 375 degrees.

Over the years, I have used different methods to measure out cookie dough to get uniformed cookies. Somehow the results are always various sizes of cookies! For the Healthy Oatmeal Raisin Cookie I used a Pop-Out Cookie Dough Scoop that came in three different sizes. First I sprayed the scoop with non-stick spray to make it easier to remove the dough. Overall, it worked well with keeping the cookies more uniformed in size. The cookies do not expand much when baking so more cookies can be placed on a baking pan. On a large baking plan, 15 cookies worked well.

Let the cookies cool on a cookie sheet for five minutes before moving to a cooling rack. But be sure to enjoy a cookie or two while still warm to get the gooey texture of the dark chocolate chips!

Ingredients

Dry Ingredients

  • 1 cup King Arthur’s White Whole Wheat Flour
  • 1 cup Quaker Oats Quick Oats
  • 3/4 cup Bob’s Red Mill Organic Whole Ground Flaxseed Meal
  • 1 tsp. Baking Soda
  • 1 tsp. Ground Cinnamon

Wet Ingredients

  • 3/4 cup Unsalted Butter softened
  • 3/4 cup Dark Brown Sugar packed
  • 1 Large Egg
  • 1 tsp. Vanilla

Fruit Ingredients

  • 1 cup Raisins or favorite Dried Fruit
  • 1/2 cup Dark Chocolate Chips

Instructions

  • Preheat oven to 375 degrees.
  • Sift together dry ingredients, twice, except for the Quick Oats and Flaxseed Meal. Mix them in after the other dry ingredients are sifted.
  • Beat butter and dark brown sugar in a large mixing bowl until creamy. Add the remaining wet ingredients and mix until combined. 
  • Gradually mix in the dry ingredients. Add raisins and stir.
  • Measure out a rounded tablespoon for smaller cookies to make about 30-cookies. 
  • Drop onto either an ungreased baking sheet or one lined with parchment paper. Bake between 9 to 11 minutes. 
  • The centers of this cookie will be soft and the edges should be a light brown.
  • Let cookies rest a couple of minutes on baking sheet and then remove to a cooling rack.
