It is Super Bowl Sunday with Buffalo Style Meatballs!

A fabulous twist on traditional Meatballs that we enjoy all year long!! The Buffalo Wing Sauce adds a wonderful dimension and flavor! The carrots and celery is added to the meatballs for even more flavor and moisture!! It is hard to stop eating them! Also consider making them smaller as an appetizer! Typically I make 3 recipes with freezing individual meal portions. Makes putting dinner together during the week a bit easier! Enjoy this dish!

Ingredients

Step 1:

  • Vegetable oil for brushing
  • 2 tbsp Sour Cream
  • 3/4 cup Panko Breadcrumbs
  • 1 Large Egg

Step 2:

  • 1 Carrots shredded
  • 1 Celery Stalk finely diced

Step 3:

  • 1 pound Ground Turkey
  • 2 Scallions finely chopped
  • 1/2 tsp Parsley dried
  • 1 clove Garlic grated
  • 1/4 tsp Freshly Ground Pepper
  • 1/2 tsp Kosher Salt

Step 4:

  • 1 tbsp Olive Oil
  • 2 Scallions finely chopped
  • 1 cup Chicken Broth low-sodium
  • 1/2 cup Original Anchor Bar Wing Sauce your favorite heat
  • 1/2 cup Ketchup

Blue Cheese Dip:

  • 1/2 cup Crumbled Blue Cheese 2 ounces
  • 3/4 cup Sour Cream

Serve with:

  • Carrots and Celery
  • Original Anchor Bar Wing Sauce

Instructions

Step 1:

  • Preheat the oven to 400 degrees F and spray two cooking pans with stick-free spray. (This step is to brown the meatballs which could also be done on the stovetop in a skillet.) 
  • Mix 2 tablespoons sour cream and egg until smooth in a large bowl and then add the Panko; let sit 5 minutes.

Step 2:

  • Add shredded carrot and diced celery into the bowl with the Panko mixture.

Step 3:

  • Add the meat, scallions, parsley, garlic, pepper, salt and mix with your hands until combined. 
  • Dampen your hands and shape the mixture into desired size. You can make mini meatballs for an appetizer or regular size. 
  • Arrange them on the prepared baking sheet or brown in a skillet on the stovetop. Bake until browned; flip over and cook for a few more minutes or until browned.

Step 4:

  • Add olive oil in a large pot over medium-high heat. Add scallions and cook until wilted, about a minute. 
  • Add the chicken broth, Buffalo wing sauce and ketchup; bring to a boil, then reduce the heat to medium low. Simmer until the sauce slightly thickens.
  • Add the meatballs; spoon sauce over the meatballs, cover, simmer until tender and cooked through.

Blue Cheese Dip:

  • Mix the blue cheese and sour cream in a small bowl. Transfer the meatballs to a bowl and serve with the vegetable sticks and blue cheese dip.

Notes

Calories include the Blue Cheese Dip but not additional vegetables served with the dip. Calories will change depending upon how many meatballs made from this recipe.

    1. They are beyond awesome! They also make a great appetizer if you make them smaller. Plus you can dip them in Blue Cheese just like you do Chicken Wings!
