At $2.00 a burrito, Meal Prep Breakfast Burritos are a budget friendly way to stock up your freezer for future meals! Breakfast Burritos are great for starting your morning. Plus they make a wonderful lunch and dinner! In fact it is one of my go to recipes for lunch! We conducted several experiments with different types of burritos, measurement of ingredients, and figuring out how to roll a burrito. Based upon our research and experiments, we are providing 7 Tips for Making Breakfast Burritos. We are sharing answers to commonly asked questions and step by step instructions! And as a bonus a short video of how to roll a burrito using an assembly line approach. The video is not perfect and shows when I make any mistake. But I believe in presenting cooking as it really is and everything does not always go to plan!

7 Tips for Making Breakfast Burritos
- Selecting a Burrito: Select a good quality flour burrito because it is important that it stretches so it does not tear when rolling. Do not use a tortilla wrap since they tend to tear when rolling. My preference is Mission Flour Tortillas Large Burrito Super Soft. (This is not a paid endorsement.)
- Rolling a Burrito: If you want to know how to roll a burrito, go to a Mexican burrito place like Moe’s and watch how they roll a burrito.
- Burrito Size: We found the ideal size is 10 to 12 inches to make it easier to roll.
- Peppers Moisture: After cutting the peppers wrap in paper towels to remove any excess moisture.
- Hash Browns: Select a frying pan that has a large base to brown more potatoes at a time. Allow them to brown without turning too often. The more you turn them, the longer they take to cook and brown.
- Scrambled Eggs: Crack each egg into a separate small bowl in case eggshells end up falling into the broken egg. Brown eggs make it easier to see those eggshells!
- Cool Cooked Ingredients – After cooking your ingredients, cool them before rolling the burritos if you are freezing them. Place the cooked eggs and potatoes in large, flat containers and place in the refrigerator uncovered to help with the cooling process.

How Do You Reheat Breakfast Burritos?
Remove burritos from the freezer the prior night thawing in the refrigerator. When ready to enjoy, remove the foil, then place on a microwave safe plate and microwave for 60 – 90 seconds. It does not take long to reheat them so start on the conservative side. If the burrito is frozen, then add more time.
Another option is to reheat in the oven. Preheat to 350 degree, leave the burritos in their foil, reheat for about 10 – 15 minutes until desired temperature. If reheating from a frozen state, add more time.
How Do You Keep Breakfast Burritos From Getting Soggy?
If making burritos as part of your meal planning to enjoy later, make sure your cooked ingredients are cooled before rolling. Otherwise condensation can build within the burrito. We found that cooking the peppers led to a wetter burrito once thawed. Instead we chop the peppers and then dry with a paper towel to remove excess moisture. Lastly, tightly wrap with aluminum foil. Some people like to first wrap the burrito with plastic wrap.
How to Freeze Breakfast Burrito?
Wrap each burrito with aluminum foil. Label and date each burrito. Place them in a single layer in a freezer safe Ziploc bag. Remove the air from the bag when sealing. Once frozen, stack the burritos in a freezer ziplock bag.

How to Roll a Breakfast Burrito?
- Workstation: Create a workstation with all the ingredients in an assembly line in order of placing onto the burrito. Place 8 foil wraps with a burrito wrap on top on your workstation.
- Cheese: Standing in front of the burrito, add the shredded cheese in a row from left to right by the edge closest to you. You are starting a “line of ingredients” that is important when rolling the burrito. Try to keep the ingredients away from the edges and closest to you to avoid them pushing out when rolling.
- Potatoes: Add the potatoes on top of that “line of ingredients'”.
- Peppers: Place the peppers on top of the potatoes.
- Scrambled Eggs: Add the scrambled eggs.
- Chives: Garnish with dried chives.
- Repeat: Repeat the process for all 8 burritos before you start to roll them.
- Folding From Left and Right: Standing in front of the assembled burritos, start with folding the left and right side into the center.
- Fold Closest Edge: Then fold the edge closest to you into the center portion and then finish rolling the burrito. It is key to not remove your hands and keep pressing the ingredients into the burrito and away from the edge. This helps with rolling the burrito reducing ingredients spilling out.
- Final Wrap: Finish rolling the burrito pressing the ends into the burrito. Immediately roll tightly with the aluminum foil that helps with forming the burrito.
Rolling a Breakfast Burrito Video
The below video shows me rolling Meal Prep Breakfast Burritos. There is not any audio or verbal instructions in this video. It visually demonstrates the written instructions in the above section on How to Roll a Breakfast Burrito. One burrito broke and a second did not roll too well. I remade them with clean burritos. If reheating in the oven, then a burrito with a small tear is not a problem since the aluminum foil will help keep the ingredients inside. You can see me doing that in the video. Immediately wrap in foil because it helps seal the burrito. Sometimes I start rolling the burrito by folding in the edge closest to me and then the sides. - 1 cup Sweet Onions chopped
- 4 ½ cups Potatoes Hash Browns (small diced or shredded)
- 2 tsp Season Salt
- 1/2 tsp Pepper freshly grounded
- 2 tbsp Butter
Scrambled Eggs Ingredients
- 16 Large Eggs Grass Fed
- 1 tbsp butter
- Salt
- Pepper
Toppings Ingredients (Optional)
- Salsa
- Sour Cream
Instructions
Hash Brown Preparation
- In a large frying pan, heat canola oil.
- Add hash browns and onions.
- Add half the seasoned salt and pepper. Cook 8 minutes.
- Flip, add remaining seasoning and add butter. Cook 8 minutes
- Flip again cooking another 5 minutes or until desired brownness. At this point you can add the peppers if you want them cooked.
Scrambled Eggs Preparation
- Whisk the eggs together with salt and pepper.
- Melt butter in a large non-stick pan.
- Pour in scrambled eggs and gently stir and turn until cooked through.
Measurements Per Burrito Preparation
- 1/3 cup Cheddar Cheese
- 1/3 cup Hash Browns
- 2 tbsp Pepper Mixture
- ½ cup Scrambled Eggs
