At $2.50 a bowl, One Pot Lasagna Soup is a fantastic way to enjoy lasagna without all the work! Enjoy all the ingredients from a traditional lasagna but in a soup format! Every spoonful includes gooey ricotta and mozzarella cheeses, lasagna noodles, and a delicious homemade sauce with garlic and basil. Top with freshly grated parmesan cheese! Then add a burst of freshness with more basil. Want a heartier mealt? Then add Mini Turkey Meatballs or cooked ground turkey to round out this meal!

How to Make One Pot Lasagna Soup

  • Spray a 5.5 quart soup pan with nonstick spray. 
  • Heat for a few minutes then add the ground turkey plus chopped onions. 
  • While the ground turkey is cooking, chop the garlic, measure the tomato paste, chicken broth, dried basil, salt, and pepper. 
  • Open the canned ingredients. Break the lasagna noodles into bite size pieces.
  • Once the ground turkey is cooked; drain out any excess fat by tipping the pan and using a spoon to remove most of it.
  • Add all the One Pot Lasagna Soup ingredients, cover and bring to a boil until the lasagna noodles are cooked.
  • Remember to remove the bay leaves before serving! 
  • Ladle into a soup bowl. Top with a mixture of Ricotta and Mozzarella cheese; freshly grated Parmesan Cheese and fresh Basil!
  • Adding more chicken broth makes a soup broth whereas reducing the chicken broth mimics a thicker lasagna.
  • Adding more noodles can require more chicken broth since it soaks up the broth!
  • Let everyone add their cheese mixture to personalize the experience!

Working with Ground Turkey

Cooking with ground turkey is different than ground beef. Ground turkey is lean and tends to cook into chunks instead of tender like ground beef. To get around this problem, I cut the ground turkey into chunks before adding it to the hot skillet. Be sure to immediately stir the ground turkey to keep it from forming into chunks. Refer to my How To Make Mini Turkey Meatballs recipe for baking, frying and freezing meatballs!

More Tips for Making a 30 Minute Soup

The time to prep and make the One Pot Lasagna Soup can vary. There are several options to make a 30-minute soup including prep time.

  • Are you into make-ahead options? I like to keep a couple containers of meatballs in the freezer. Check out my easy to make Mini Turkey Meatballs recipe. When making One-Pot Lasagna Soup just take out a serving and drop into the soup! 
  • If you find the lasagna noodles take too long to cook, then consider adding thinner or smaller noodle that cooks quicker. 
  • The last option is a meatless lasagna. Removing the time to cook the ground turkey saves about 10-minutes.

Ingredients

Lasagna Soup Ingredients

  • Non-stick Spray
  • 1 pound Ground Turkey or Ground Beef, Ground Chicken
  • 1 cup Sweet Onions diced
  • 3 Garlic Cloves chopped
  • ½ cup Tomato Paste
  • 1 tbsp Dried Basil
  • 2 Bay Leaves
  • 2 tsp Kosher Salt
  • 1/4 tsp Ground Pepper
  • 1 14.5 oz can Diced Tomatoes
  • 1 28 oz can Crushed Tomatoes
  • 6 cups Chicken Broth to 8 cups see the Notes section
  • 8 Lasagna Noodles broken into bite size pieces

Cheese Topping Ingredients

  • 1 cup Ricotta Cheese
  • 1 cup Cheese shredded
  • ½ cup Parmesan Cheese sliced or shredded

Instructions

Initial Preparation

  • Spray a 5.5 qt soup pan with non-stick spray and heat on a medium burner.
  • Dice the onions.

One Pot Lasagna Soup Preparation

  • Add the ground turkey to the hot pan along with the onions until the meat is cooked. Stir periodically to ensure the ground turkey cooks evenly.
  • While the ground turkey is cooking, chop the garlic, measure the tomato paste, dried basil, salt, pepper.
  • Open the canned ingredients. Break the lasagna noodles into bite size pieces.
  • Once the ground turkey is cooked, drain any excess fat by tipping the pan and using a spoon to remove most of it.
  • Turn the burner on high. Add the remaining soup ingredients.
  • Stir, cover and bring to a boil and cook until the noodles are cooked.
  • Ladle soup into a bowl. Garnish with cheese toppings.

Tips
  • Cooking time depends upon if ground turkey is added and multi-tasking of the prep and cooking steps instead of sequentially. Adding make ahead mini-meatballs also reduces the time.
  • The noodles will soak up some of the stock. I like to have extra Chicken Broth just in case more noodles are added. 
  • If you want a soup consistency then add more Chicken Broth. For a thicker lasagna type stew, reduce the Chicken Broth.
  • Room temperature Chicken Broth is helpful in reducing the cooking time. A cold broth out of the refrigerator can increase the overall cooking time.
  • If you find the lasagna noodles take too long to cook, then consider adding thinner or smaller noodles that cooks quicker.
