8 Tips for Making Perfect Oven Roasted Red Skin Potatoes
- Purchase small red skin potatoes to make them easier to cube
- Wash under cool water with a vegetable brush then drying
- Line a baking pan with non-stick aluminum foil for easy clean up
- Use a combination of dried and fresh herbs to add more flavor and color
- Top with a sharp cheese like freshly grated parmesan cheese to kick up the flavor profile

- A broiler for a minute or two can help crisp the potatoes but be careful to not burn them or dry them out
Answers to Common Questions
As promised, below are a few common questions we are asked about making oven roasted red skin potatoes. Let us know if you have other questions!
What seasonings work with oven roasted red skin potatoes?
As someone who adores potatoes, I love introducing different ingredients into the traditional roasted potato dish.
- To add a bit of heat I included Aleppo Pepper that provides a nice deep red color and is considered a mild Chile flake. Sometimes we add more after roasting the potatoes to individualize the heat level.
- Layering of flavors is important. Experimenting with different seasonings and cheese can change the flavor profile each time.
- Dried herbs are wonderful when baking because they have a deeper, richer flavor than fresh herbs.
- Consider using dried basil, dill weed, chives and experiment with your favorite herbs!
- We use Lawry Seasoned Salt with its wonderful blend of natural herbs and spices, including paprika, turmeric, onion and garlic.
- When serving, top your oven roasted red skin potatoes with fresh chives or basil. Always a nice splash of color and fresh flavor.
- Top with freshly shredded Parmesan Cheese adding a touch of fruity and nutty flavor.
- Consider other toppings such as crispy bacon bits, sour cream, or even blue cheese to counter some of the heat from the Aleppo Pepper.
Should you wash red potatoes?
Yes, I always wash any type of potato with cool water to remove any dirt to ensure they are clean. A vegetable brush works nicely for this job. Then dry them with a paper towel or layer them in paper towels. Be sure to thoroughly dry the potatoes. It is not a good idea to introduce water into your potato casserole since the potatoes will “steam” instead of gaining that nice crispy outer skin.
Do you peel the potatoes?
Red potatoes are wonderful because you do not need to peel them. What a great time saver! The skin is thin and easy to eat. Plus we want to maintain the beautiful red color in our potato casserole and nutrients from the potato skin!
Instructions for Making Oven Roasted Red Skin Potatoes
Now back to making the oven roasted red skin potatoes! This quick to make dish only takes minutes to assemble with an easy clean up. Line a large baking pan with non-stick foil. If that does not work for you, lightly coat the baking pan with stick-free spray. Both versions have worked well for us.
- Wash and cube the Potatoes: Give the potatoes a quick wash, dry them, then cube into bite size chunks. Do not peel them as the skin has nutrients and adds a beautiful red color!
- Cut Sweet Onion Wedges: Cut one or two Sweet Onions in wedges.
- Mix with Olive Oil: Toss the onion wedges and cubed Red Potatoes with Olive Oil.
- Assemble Place the potato mixture evenly into the baking pan.
- Add Seasonings: Add seasonings, dried herbs and shredded parmesan cheese.
- Time to Bake: Place into the oven and bake.
- Plating: Plate adding additional toppings such as fresh chives, Aleppo Pepper and more parmesan cheese!

Ahh, that’s THE perfect potato form. I’d add rosemary to the herbs though! Ever since I had the best roasted potatoes with rosemary in one restaurant, that’s the first herb I reach for when roasting potatoes. 🙂
