  • Wash and cube the Potatoes: Give the potatoes a quick wash, dry them, then cube into bite size chunks. Do not peel them as the skin has nutrients and adds a beautiful red color!
  • Cut Sweet Onion Wedges: Cut one or two Sweet Onions in wedges.
  • Mix with Olive Oil: Toss the onion wedges and cubed Red Potatoes with Olive Oil.
  • Assemble Place the potato mixture evenly into the baking pan.
  • Add Seasonings: Add seasonings, dried herbs and shredded parmesan cheese.
  • Time to Bake: Place into the oven and bake.
  • Plating: Plate adding additional toppings such as fresh chives, Aleppo Pepper and more parmesan cheese!

  • 2 pounds Red Potatoes cut in half or quartered unpeeled
  • 2 cups Sweet onion cut in wedges
  • 2 tbsp Olive Oil

Seasonings

  • 1 tsp Pepper freshly grounded
  • 1 tsp Seasoned Salt
  • 1 tsp Dried Basil
  • 1 tsp Dried Dillweed
  • 2 tsp Aleppo Pepper Crushed
  • ¼ cup Parmesan Cheese freshly grated

Instructions

Oven Preparation

  • Preheat oven to 425 degrees F.
  • Line a baking pan, with sides, with Non-stick aluminum foil or spray with non-stick spray.

Potatoes Preparation

  • Toss the prepared potatoes and onion with olive oil in a medium size bowl.
  • Place potato mixture in a single layer on the prepared baking pan.
  • Sprinkle seasonings over the potatoes and onions.
  • Bake uncovered 30 to 40 minutes, turning half way through baking time. Bake until desired tenderness and browning of potatoes.
