As someone who adores potatoes, I love introducing different ingredients into the traditional roasted potato dish. For this version, I used Red Potatoes to add a nice color. To add a bit of heat included Aleppo Pepper that provides a nice deep red color and is considered a mild Chile flake. Layering of flavors is important. Experimenting with different seasonings and cheese can change the flavor profile each time. Dried herbs are wonderful when baking because they have a deeper, richer flavor than fresh herbs. Freshly shredded Parmesan Cheese is just awesome adding a touch of fruity and nutty flavor. When serving, top this dish with fresh herbs because they will add another pop of color.

This quick to make dish only takes minutes to assemble with an easy clean up. Line a large baking pan with non-stick foil. If that does not work for you, lightly coat the baking pan with stick-free spray. Purchasing small Red Potatoes is key to reducing time. Give the potatoes a quick wash, dry them, then cube into bite size chunks. Do not peel them as the skin has nutrients and adds a beautiful red color! Cut one or two Sweet Onions in wedges and toss with the cubed Red Potatoes with Olive Oil. Place the potato mixture evenly into the baking pan and then add your seasonings. Put into the oven and bake. It really is that simple! Another great clean up tip: wash the baking pan while it is still warm to easily remove any stains or dried on potatoes.

Oven Roasted Red Skin Potatoes
- 2 pounds Red Potatoes cut in half unpeeled
- 2 cups Sweet onion cut in wedges
- 2 tbsp Olive Oil
- 1 tsp Pepper freshly grounded
- 1 tsp Seasoned Salt
- 1 tsp Dried Basil
- 1 tsp Dried Dillweed
- 2 tsp Aleppo Pepper Crushed
- ¼ cup Parmesan Cheese freshly grated
- Preheat oven to 425 degrees F.
- Line a baking pan, with sides, with a no-stick foil.
- Toss potatoes and onion with olive oil. Place potato mixture in a single layer on the prepared baking pan.
- Sprinkle seasonings over the potatoes and onions.
- Bake uncovered 30 to 40 minutes, turning half way through baking time.
