Making the Mint Infused Simple Sugar

To make the Pomegranate Mojito we start with making the Mint Infused Simple Sugar. Consider making a larger batch since it stores nicely in the refrigerator. In a small saucepan combine water, sugar, and fresh mint. Bring to a gentle boil stirring the ingredients to dissolve the sugar. Do not boil since you will lose the ratio of sugar to water. Cover the saucepan and reduce the heat to simmer for 10-minutes. Let the Mint Infused Simple Sugar cool then pour into a glass bowl, cover and place in the refrigerator. The mint continues to infuse flavor into the simple sugar. After a few hours, take a taste test removing the mint when it reaches the desired flavor.

Pomegranate Juice is typically found in the refrigerator section of the grocery store. But Cran-Pomegranate juice also works nicely. Instead of club soda try a light citrus soda or sparkling water. Mix the Pomegranate Mojito by the pitcher or by the glass using a martini shaker. Turn this Mojito into an adult beverage by adding vodka, champagne, whiskey – the options are endless! Serve in a festive glass topping with your favorite garnish! Serve with or without ice.
