Holidays are a wonderful time to try a new cocktail. Enjoy a refreshing Pomegranate Mojito or an adult version by adding vodka or dry white wine for a lovely spritizer. This drink brings in the festive holidays colors that you can adorn with fresh pomegranate seeds, mint leaves and limes! Use this recipe as a starting point and then change the ingredients based upon desired sweetness. And the best part it is simple and quick to make. Earlier in the day make a batch of Mint Infused Simple Sugar. Then when ready to serve the Mojito, just mix together the ingredients, pour into a glass and top with your favorite garnish! Making the Mint Infused Simple Sugar

To make the Pomegranate Mojito we start with making the Mint Infused Simple Sugar. Consider making a larger batch since it stores nicely in the refrigerator. In a small saucepan combine water, sugar, and fresh mint. Bring to a gentle boil stirring the ingredients to dissolve the sugar. Do not boil since you will lose the ratio of sugar to water. Cover the saucepan and reduce the heat to simmer for 10-minutes. Let the Mint Infused Simple Sugar cool then pour into a glass bowl, cover and place in the refrigerator. The mint continues to infuse flavor into the simple sugar. After a few hours, take a taste test removing the mint when it reaches the desired flavor. 

Making the Pomegranate Mojito

The Pomegranate Mojito is a simple ratio of 1 part Mint Infused Simple Sugar to 4 parts Pomegranate Juice, Lemonade and Club Soda. Pomegranate Juice is typically found in the refrigerator section of the grocery store. But Cran-Pomegranate juice also works nicely. Instead of club soda try a light citrus soda or sparkling water. Mix the Pomegranate Mojito by the pitcher or by the glass using a martini shaker. Turn this Mojito into an adult beverage by adding vodka, champagne, whiskey – the options are endless! Serve in a festive glass topping with your favorite garnish! Serve with or without ice.
