Making 30-Minute Tomato Orzo Soup Recipe

I first enjoyed this delicious soup at Wegmans and instantly fell in love. I make mine different than they do; but if you have a Wegmans near you be sure to check out their homemade soups! Tomato Orzo Soup is easy to make recipe and can be on the dinner table in 30-minutes. 

  • Start with dicing the carrots, onions, and celery.
  • Add Olive Oil to a large soup pan and heat.
  • Add onions, carrots, and celery cooking for a few minutes.
  • Chop the garlic and open the canned tomatoes.
  • Add chopped garlic and cook for two minutes.
  • Add the tomatoes, vegetable stock and season to taste with salt and pepper. Increase the temperature to bring to a boil. While the tomato broth is cooking, chop the red peppers.
  • Add red peppers and pasta. On a medium-high heat, cook for 10 minutes. Stir periodically to keep the pasta loose. Cook until the pasta is firm but tender.
  • Temper the cream: Pour cream into a medium bowl or glass measuring cup. Add some of the hot soup to slowly raise the cream’s temperature.
  • Add cream mixture to soup and fold in the fresh basil torn into small pieces.
  • Ladle into a soup bowl topping with more fresh basil. Serve with a side of hot cheesy bread or top with Grilled Cheese Croutons

Soup Ingredients

  • 12 oz Roasted Red Peppers chopped
  • 1 cup Orzo Soup Pasta

Final Ingredients

  • 1 cup Light Cream
  • 2 tbsp Fresh Basil Torn into small pieces

Instructions
