Healthy Zucchini Bread

Dry Ingredients

  • 1/3 cup Sugar
  • 2 1/2 cups White Whole Wheat Flour or Whole Wheat Flour
  • 1 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • ¾ tsp. Kosher Salt
  • 1 tbsp. Ground Cinnamon
  • 1 tsp. Nutmeg
  • 1 tsp. Cloves

Wet Ingredients

  • 6 Large Egg Whites
  • ¼ cup Coconut Oil melted
  • ½ cup Unsweetened Applesauce
  • 2 tsp. Vanilla Extract

Other Ingredients

  • Nonstick cooking spray
  • cups Zucchini grated and not peeled
  • ½ cup Raw Walnuts chopped



  • Preheat your oven to 350 and lightly spray two 9x5-inch loaf pans with a non-stick spray. Or line your loaf pans with parchment paper to make it easier to remove the bread. Just leave about two inches hanging over the loaf pan for easy removal.
  • Sift dry ingredients together, twice in a large bowl.
  • Combine wet ingredients in a small bowl.
  • Slowly add and mix the wet ingredients into the dry ingredients.
  • Fold in the shredded Zucchini and Walnuts.
  • Divide the batter between the two prepared pans and bake for 30 to 35-minutes or until toothpick comes out of the center fairly clean but not dry.
  • Cool for a few minutes, remove the bread from the pan and completely cool.
  • Divide into 20-slices.
