  • 12 ounces Fresh Green Beans chopped
  • 1 tbsp Olive Oil
  • 2 tbsp Sweet Onion chopped
  • 1 tsp Garlic minced
  • 1 tbsp Sweet Miso Paste
  • ½ cup Water
  • 2 tbsp Almonds sliced

Green Beans Preparation

  • Steam the green beans until they are slightly underdone and then place into ice water to stop them from cooking. Drain and dry.
  • If you wish to toast the almonds, now is a good time! Place almonds in a frying pan with a little butter. Cook on low heat until light brown.
  • Miso Dressing Preparation
  • In a pan, heat the olive oil and add the sweet onion cooking for about 2-minutes.
  • Add garlic and cook for a minute to release the flavors. But be careful because garlic burns easily.
  • Mix in the miso paste and the water.
  • Bring to a gentle boil and cook for a couple of minutes.
  • Add green beans and cook for a minute or two to ensure the green beans are properly coated. Pour into a serving bowl and top with sliced almonds.
  • Another option is to plate the green beans previously chilled in ice water. Pour the warm miso sauce over them and top with sliced almonds.
