Vegetable Ingredients

  • 24 ounces Fresh Green Beans

Sauce Ingredients

  • 2 tbsp Butter
  • 1/8 cup Flour
  • 2 cups Milk
  • 1 Garlic Clove finely grated
  • 4 ounces Fresh Goat Cheese
  • 1 tsp Smoked Paprika
  • Kosher salt and freshly ground pepper

Topping Ingredients

  • French-Fried Onions

Oven Preparation

  • Preheat the oven to 350°
  • Spray a shallow 9-by-13-inch baking dish
  • Bake for 20-minutes

Preparation

  • We start with steaming and blanching the fresh green beans. Drain them, dry thoroughly, and cut into bite size pieces.
  • In a medium saucepan, melt the butter.
  • Add and whisk the flour over low heat for about 4 minutes until smooth.
  • Gradually whisk in milk and garlic bringing to a boil.
  • Reduce the heat to simmer, whisking constantly, until thick, about 5 minutes.
  • Remove from the heat and stir in the goat cheese.
  • Season the sauce with salt, pepper and ½ teaspoon of the smoked paprika.
  • In a large bowl, toss the green beans with the sauce.
  • Spread the green beans into a prepared casserole pan.
  • Sprinkle the remaining ½ teaspoon of smoked paprika over the top.
  • Bake for 20-minutes and then add the French-Fried Onions.
  • Bake a few more minutes until the French-Fried Onions are lightly browned.
  • Let the casserole stand for a few minutes before serving.
