Blood Orange Avocado Salad with Macadamia Nut Oil Dressing
A wonderful, healthy salad for two packed with a lot of nutrients. Spinach is great nutritional ingredient for a salad however for this recipe Butter Lettuce was selected. Sometimes it is nice to change it up a bit!

2cupsButter Lettucewashed and leaves torn into pieces
1Ripe Avocadocut into slices
1Blood Orangepeeled and separated into segments
1/8cupDried Fruit such as Cranberries or Apricots
2tbspMacadamia Nut Oil
1tspAgave Nectar / Raw Honey
Wash and dry the butter lettuce
Cut the avocado into slices
Peel the blood oranges
Prepare the salad
Place Butter Lettuce on a plate and then add the avocado, blood orange segments and top with sliced almonds and dried fruit.
In a small bowl, mix together macadamia nut oil with sweetener and then drizzle over salad.
