Preheat the oven to 350°
Spray a shallow 9-by-13-inch baking dish
Bake for 20-minutes
We start with steaming and blanching the fresh green beans. Drain them, dry thoroughly, and cut into bite size pieces.
In a medium saucepan, melt the butter.
Add and whisk the flour over low heat for about 4 minutes until smooth.
Gradually whisk in milk and garlic bringing to a boil.
Reduce the heat to simmer, whisking constantly, until thick, about 5 minutes.
Remove from the heat and stir in the goat cheese.
Season the sauce with salt, pepper and ½ teaspoon of the smoked paprika.
In a large bowl, toss the green beans with the sauce.
Spread the green beans into a prepared casserole pan.
Sprinkle the remaining ½ teaspoon of smoked paprika over the top.
Bake for 20-minutes and then add the French-Fried Onions.
Bake a few more minutes until the French-Fried Onions are lightly browned.
Let the casserole stand for a few minutes before serving.
